You've got all the ingredients for that wonderful recipe except what you thought was baking powder is really baking soda. What can you do? Here are a few substitutions for common ingredients that you already have on hand.
For one cup of cake flour you can substitute 1 cup minus 2 tablespoons of all purpose flour.
For one cup of self-rising flour you may substitute one cup of all-purpose flour, 1/2 teaspoon salt and 1 teaspoon of baking powder.
If you are using cornstarch for thickening, you can substitute two tablespoons of flour or 2 teaspoons of quick cooking tapioca for one tablespoon of cornstarch.
For each teaspoon of baking powder substitute 1/4 teaspoon baking soda plus 1/2 cup buttermilk. (Be sure and lessen liquid in recipe by 1/2 cup.)
To replace a cup of powdered sugar use one cup granulated sugar and 1 teaspoon cornstarch whirred in the blender until powdered.
Out of brown sugar? Use 2 tablespoons of molasses in 1/2 cup granulated sugar for 1/2 cup brown sugar.
To make sour milk use 1 tablespoon lemon juice or vinegar plus one cup less 1 tablespoon sweet milk for each cup of sour milk called for in your recipe. (Be sure and let stand for 5 minutes before using.)
No cracker crumbs? Use 1 cup of bread crumbs for 3/4 cup of cracker crumbs.
Does the recipe call for fresh herbs and all you have is dried? Use 1 teaspoon dried herbs for each tablespoon of fresh herbs.
Use 1 teaspoon dry mustard for 1 tablespoon of prepared mustard.
For each cup of ketchup called for use 1 cup of tomato sauce plus 1/2 cup sugar and 2 tablespoons vinegar. (Use in recipes only.)
Use one tablespoon instant minced onion for 1 small fresh onion.
For each marshmallow needed use 10 miniature marshmallows.
